What it tastes like

Stout, and a twist of lemon.

Yeast, malted grain, water and a micro-lot of freshly harvested Arabica. Coffee notes in a stout are an old idea; this runs it backwards, using beer fermentation to make a coffee. Sweet, full-bodied and slightly funky, with a lemony acidity that sets the malt off.

Questions people ask

About this coffee

Is there alcohol in it?
No. The beer fermentation happens to the coffee cherry before roasting, and nothing alcoholic survives the process.
What does it actually taste like?
Sweet and full-bodied with a malty, stout-like character and a lemony acidity over the top. Slightly funky, in the way a good ferment is.
How should I brew it?
Black, through a manual brewer, where the acidity and the malt both have room.
Which grind should I choose?
Pick the brewer you actually use and we grind to match. If you use more than one, or you are not sure, choose whole beans and grind at home for the freshest cup.
How fresh will it be when it arrives?
We roast after you order rather than packing from stock, and every bag carries its roast date. Coffee is at its best in the two to four weeks after roasting, which is the window we ship into.

Coffee, generally

Does dark roast coffee have more caffeine?

No, slightly less. Roasting burns off a small amount of caffeine, so darker beans hold marginally less than lighter ones. Because dark beans are also less dense, a scoop of dark roast carries noticeably less caffeine than a scoop of light roast. Measured by weight the difference is small.

Is dark roast coffee bitter?

It should not be. Harsh bitterness usually comes from over-extraction, stale coffee or a grind that is too fine for the brewer, rather than from the roast itself. A well-roasted dark coffee tastes bittersweet, like dark chocolate, not burnt.

What does roasted to order actually mean?

We roast your coffee after you place the order rather than shipping from pre-roasted stock, and every bag carries the date it was roasted. Most coffee sold in India was roasted weeks or months before it reaches you.

How long does coffee stay fresh after roasting?

Coffee is at its best in the two to four weeks after roasting. After about six weeks the flavour fades, though it does not spoil. This is why the roast date matters more than the expiry date on a bag of specialty coffee.

How should I store coffee beans at home?

Keep the bag sealed, somewhere cool and dark. Not in the fridge, where condensation and food smells get in, and not on top of the machine where it stays warm. Buy quantities you will finish in a few weeks rather than stockpiling.

What is the difference between washed and natural processed coffee?

Washed coffee is pulped and fermented, then washed clean before drying, which gives a cleaner, more consistent cup that shows the bean itself. Natural coffee dries with the fruit still on, which pushes it fruitier and heavier.

Is single estate coffee better than a blend?

Not better, different. Single estate coffee comes from one farm and expresses that place and season. Blends are built to hold a consistent taste across seasons. Each of our coffees says on its page where it was grown.

Arabica or Robusta, which is better?

Arabica is sweeter, more aromatic and more complex. Robusta is stronger and more bitter, with roughly twice the caffeine, and is often used to add body and crema to espresso.

How much coffee should I use per cup?

Around 15 to 18 grams of coffee for a 250ml cup is a good starting point, then adjust to taste.
